Here is a great chicken salad for those little teas and such. It can be made into finger sandwiches or served with crackers.
Special Chicken Salad
4 boneless, skinless chicken breasts boiled and shredded ( best if put in food processor)
1 small onion chopped finely
2 or 3 stalks finely chopped celery
Sweet pickles or pickle relish
1 peeled, cored and finely dice apple
Grapes..quartered ( white or red)
Salt to taste Curry powder to taste Sugar to taste ( not too much).
Roasted almonds Water Chestnuts ( drained and dried)
Enough mayonnaise to moisten ( go slowly or you will have soup....the fruits and relish really moisten this one)
TIP: Freeze bread overnight before making finger sandwiches. It will not make soggy sandwiches, but it certainly helps when cutting into shape. Fill sandwiches then cut.
