    Caesar Salad Supreme
    A wonderful, rich, anchovy dressing makes this salad a
    meal. Serve with crusty Italian Bread. Prep Time: approx. 20
    Minutes. Cook Time: approx. 15 Minutes. Original recipe makes
    6 servings. Recipe has been scaled to make 6 servings.


    6 cloves garlic
    3/4 cup mayonnaise
    5 anchovy fillets, rinsed
    1/4 cup and 2 tablespoons
    grated Parmesan cheese
    1 tablespoon lemon juice
    1 teaspoon Worcestershire sauce
    1 teaspoon Dijon-style
    prepared mustard
    salt to taste
    ground black pepper to taste
    1/4 cup olive oil
    4 cups white bread cubes
    1 head romaine lettuce-
    rinsed, dried and torn into bite


    Directions
    1 Mince half of the garlic. In a small bowl, combine
    garlic with mayonnaise, anchovies, 1/3 of the Parmesan
    cheese, Worcestershire sauce, mustard, and lemon juice.
    Season to taste with salt and black pepper. Refrigerate
    until ready to use.
    2 In a large saute pan, heat oil over medium heat. Cut
    the remaining cloves of garlic into quarters, and add to
    hot oil. Cook and stir until brown: remove garlic from
    pan. Add bread cubes to the hot oil. Cook, turning
    frequently, until lightly browned. Remove croutons from oil, and
    salt and pepper to taste.
    3 Place lettuce in a large bowl. Toss with dressing.
    Add remaining Parmesan cheese and croutons; toss.
