List of Ingredients
3 c. sweet potatoes, peeled, cooked, and mashed
1 c. sugar
1/2 c. plus 3 T. butter melted and divided
2 eggs beaten
1/3 c. milk
Topping:
1 tsp cinnamon
1/2 c. light brown sugar
1/4 c. flour
1/2 c chopped pecans
remaining butter
Recipe
Combine potatoes, sugar, 1/2 c. butter, eggs, vanilla and milk. Mix well. Turn into a 2 qt greased baking dish. Combine remaining butter, cinnamon, brown sugar,flour and pecans together. Sprinkle brown sugar mixture over sweet potatoes. Bake at 360 for 25 minutes or until bubbly.
I wrap the potatoes in foil and bake them. Much easier than peeling and boiling them. (VM)
