I have a small catering business, and this is how we prepare turkey ahead of time. Roast the turkey, as usual, but don't overcook until it's dry. I use a cooking bag. Let cool and slice it. Return the sliced turkey to a new oven baking bag. Strain the broth and pour over the cooled turkey. Place in the refrigerator. You can freeze it at this point, too, if it's going to be more than a day or so before serving it. About 1 hour before you want to serve, place the turkey in baking bag in a 325 degree oven. Shake it around once in a while to get the warm broth over the turkey. Once it is sufficiently hot, but a hole in the corner of the bag and drain off the broth, to use for gravy, noodles, etc. Cut the bag open and slide onto a serving platter. Good Luck!
