BLUEBERRY MUFFINS

Recipe Introduction
Butavan may be purchased at any gourmet cooking store. It is great in muffin and cakes.
List of Ingredients
- 1 stick melted butter
- 1/2 cup cooking oil
- 2 eggs
- 1 T. Butavan
- 1 can blueberries (3.5 oz.) drained, but save juice
- 1 3/4 cup sugar
- 3 cups flour
- 1 cup buttermilk
- 1 T. baking powder
- 1 tsp. baking soda
Instructions
- Mix together butter and oil, then add sugar, eggs and flour (baking powder and soda in flour).
- Beat with a spoon, add butavan, buttermilk, blueberries and 1/4 cup blueberry juice.
- Spray muffin pan with baker's joy or grease and flour. Bake at 400 for 18 - 20 minutes. Makes 48 small muffins.
