GINGERBREAD PANCAKES

- 2 1/2 cups flour
- 5 tsp baking powder
- 1 1/2 tsp salt
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp ginger
- 1/4 cups molasses
- 2 cups milk
- 2 eggs
- 6 T. melted butter
- 1 cup raisins (optional)
Instructions
- In a large bowl, sift together the flour, baking powder, salt, baking soda and spices. In a separate bowl, combine the molasses and milk; beat in the eggs and melted butter. Add to the flour mixture and stir until just moistened; stir in raisins. Ladle the batter onto a hot lightly-oiled griddle and cook until golden brown on both sides.
