CHEESY POTATO SOUP

List of Ingredients
- 5 lbs. potatoes
- 6 or 8 cans chicken broth
- 1 stick butter or margarine
- 1 small onion, diced
- 2 carrots, grated
- 1 2 lb. block velveeta cheese, cut in small pieces
- 1 medium carton sour cream
- bacon bits
- chives
Instructions
- Peel and dice potatoes.
- Saute onion and carrots in large soup pot. When onions are translucent add chicken broth and potatoes. Cook until tender.
- Add cheese and stir gently until melted. If soup needs to be thicker mix some water and flour and stir into soup until desired thickness is achieved.
- Just before serving, blend sour cream. Top with bacon pieces and chives.
- Enjoy!
Final Comments
I use my own judgement with the chicken broth. You can improvise the amount of ingredients to suit the needs of your family.
