    CHEESY POTATO SOUP

    List of Ingredients


    • 5 lbs. potatoes
    • 6 or 8 cans chicken broth
    • 1 stick butter or margarine
    • 1 small onion, diced
    • 2 carrots, grated
    • 1 2 lb. block velveeta cheese, cut in small pieces
    • 1 medium carton sour cream
    • bacon bits
    • chives


    Instructions


    1. Peel and dice potatoes.
    2. Saute onion and carrots in large soup pot. When onions are translucent add chicken broth and potatoes. Cook until tender.
    3. Add cheese and stir gently until melted. If soup needs to be thicker mix some water and flour and stir into soup until desired thickness is achieved.
    4. Just before serving, blend sour cream. Top with bacon pieces and chives.

    5. Enjoy!


    Final Comments


    I use my own judgement with the chicken broth. You can improvise the amount of ingredients to suit the needs of your family.
