CRANBERRY/NUT BREAD

List of Ingredients
2 cups flour
1 1/2 teaspoon baking powder
1/2 teaspoon soda
1/2 teaspoon salt
1 cup sugar
1 cup cranberries (fresh or frozen that have been slightly chopped or halved) dried cranberries work too
1/2 cup chopped nuts (pecans or walnuts)
1 large egg, beaten
3 Tablespoons oil
1 cup orange juice
orange zest (optional)
Preheat oven to 350 degrees
Sift dry ingredients together. Add chopped cranberries and nuts. In another bowl mix egg, orange juice, and oil. Stir into dry ingredients until moistened. Don't over mix. Bake in one greased 8x5 loaf pan @ 350 degrees for about one hour or 3 small 5x2 1/2 inch pans for about 40 minutes. Test with toothpick. Cool 10 minutes before taking out of pans. Recipe
