HAWAIIAN SWEET BREAD
This was originally Portugese Sweet (Pao Doce), Since Hawaii is now made up of people from many lands and Portugese sweet bread was always a favorite there it now seems to be called Hawaiian Sweet bread or Kings bread. It is very good toasted in the morning.
List of Ingredients
- 3 Tablespoons sugar
- 2 packages dry yeast
- 1/2 cup potato water (water from cooked potatoes)
- 1 cup mashed potatoes
- 1/8 teaspoon ground ginger
- 1/2 cup milk (scalded and cooled)
- 2 teaspoons salt
- 6 eggs
- 1 3/4 cups sugar
- 1/2 cup butter, melted
- 8 cups of flour
Instructions
- Add sugar, and yeast to potato water. Stir until dissolved. Blend in mashed potato and ginger. Set aside and let rise until doubled in bulk (about 5 or 10 minutes)
- Scald milk. Melt butter and set both aside to cool to luke warm.
- Beat eggs. Add sugar gradually while continuing to beat. Stir in cooled butter.
- Combine yeast to egg mixture. Blend. Stir in 2 cups of the flour, add milk, and beat.
- Add two more cups of flour. Beat 5 minutes. Add remaining flour gradually, kneading when dough becomes too stiff to beat.
- Turn out on floured board and knead 10 minutes, adding only enough flour to prevent sticking.
- Place dough in oiled bowl, cover and let rise until doubled.
- Divide into 4 portions and shape into round loaves and place on greased cookie sheet or place in 5 x7 inch oiled loaf pans. Allow to rise.
- Brush with beaten egg. Bake in preheated oven 350 degrees for 40 to 50 minutes until browned
Final Comments
I mix and knead this recipe in my heavy duty mixer but I only make half the recipe. The whole recipe would not fit in my mixer. I suppose it could be adapted to a bread machine.
