    HONEY OAT CASSEROLE BREAD

    1 pkg yeast
    1/4 C warm water (110-115)
    1/4 C butter
    1/4 C honey
    1 C boiling water
    2 eggs
    1 C quick-cooking oats
    1 tsp salt
    3 1/2 C flour

    In your mixer bowl, dissolve yeast in warm water. In another bowl, combine butter, honey and boiling water. Stir until butter is melted; cool to 110-115 degrees.

    Add eggs, oats, salt, butter mixture, and 2C flour to the yeast in the mixer bowl; beat on medium speed fo 2 minutes. Then add rest of flour and mix well. Dough will be soft and slightly sticky. Place in greased, covered bowl to rise 'til doubled.

    Punch down the dough, place in 1 1/2 qt casserole, let rise again. Bake at 375 for 35-40 minutes or until golden.

    This makes a very spongy sticky dough but bakes up nicely.
