NUTTY CARROT MUFFINS

- 2 cups flour
- 1/2 cup sugar
- 1 1/2 teaspoon baking powder
- 1 teaspoon salt
- 3/4 teaspoon cinnamon
- 2/4 teaspoon ginger
- 1/2 teaspoon cardamon
- 1/2 teaspoon baking soda
- 3/4 cup buttermilk (to 3/4 cup milk add 3/4 Tablespoons lemon juice and let sit 5 minutes)
- 1/3 cup oil
- 2 eggs
- 2 cups shredded carrots
- 1/2 cup chopped nuts
- 1/4 cup raisins
Instructions
- Mix the first 8 ingredients (dry ingredients). Mix together the buttermilk, oil, eggs. Make a well in the center of the flour mix. Add the buttermilk mix all at once, tossing with a fork until dry ingredients are just moistened. Fold in carrots, nuts and raisins. Fill muffin cups 3/4 full and bake until tops are firm and brown. 350 degrees for 20 to 22 minutes. Makes 12 to 18 muffins.
