2 C Quick Oats
2/3 C Brw Sugar
1/4 C Margerine or Butter
1 tsp Salt
2 1/2 C BOILING Water
2 pkg (or 2 scant Tbsp) Dry Yeast
1/2 C WARM Water
5 1/2 - 6 C Flour
In large mixing bowl or your KA Mixer bowl combine oats, sugar, butter, & salt then add boiling water. Cool to approx 110 degrees. Dissolve yeast in warm water. Combine yeast with oats mixture and 2 cups of flour. The start adding flour until it forms a soft dough. Dump out on floured counter & start kneading. Let rise until doubled. Punch down. Form into rolls. Let rise. (I put 8 rolls in a greased 9" cake pan) Bake at 350 for 25-30 minutes . Brush w/butter. Makes approx 30 rolls.
Note: I did add 2 eggs but I think it made the rolls rather chewy. Good though. Will not add any eggs next time. Made 4 pans of rolls and I would think the recipe could be halved.
