ONION/BACON OATMEAL BUNS
This recipe is from book number one, "Taste of the Country". It is really good and is great for company. It makes a lot so would be good for a pot luck.
List of Ingredients
- 2 cups boiling water
- 1 cup quick cooking oats
- 3 tablespoons vegetable oil
- 2 packages quick rise yeast
- 1/3 cup warm water
- 1/4 cup molasses
- 2/3 cup brown sugar
- 1 egg
- 2 teaspoon salt
- 6 cups flour, maybe more
- 3/4 pound bacon, cut in 1/4 in pieces, fried crisp and drained ( I usally crumble it after frying)
- 2 cups finely diced onion, sauted until slightly brown in a little of the bacon drippings.
Instructions
- Pour boiling water over oats. Cool. Add oil, the yeast already softened in the 1/3 cup warm water, molasses, sugar, egg and salt. Beat in 1/2 of the flour. Add bacon and onion. Add remaining flour and knead until smooth. Cover with foil and let rise until double in bulk.
- Punch down. Let rise again. Pull off lemon sized piedes and form into round bun shape. Place on greased baking sheets. Let rise until double.
- Bake 375 degrees for 18 to 20 minutes. Brush with melted butter while still hot. Makes 30 buns
Final Comments
I sometimes only make half the recipe if I don't want so many buns.
