PUMPKIN BREAD

List of Ingredients
Pre heat oven to 350 degrees
1/3 cup shortening
1-1/3 cups sugar (maybe a little less 1 cup ?)
1 cup canned or cooked pumpkin
2 eggs
1/2 teaspoon vanilla extract
1 2/3 cups all purpose flour
1 teaspoon baking soda
1/4 teaspoon baking powder
3/4 teaspoon salt
1/2 teasoon ground cinnamon
1/2 teasppoon nutmeg
1/3 cup water
1 cup chopped pecans or walnuts
In a mixing bowl, cream shortening and sugar. Add pumpkin; beat well. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine dry ingredients, add to pumpkin mixture alternately with water. Stir in nuts.
Pour into greased 9x5x3 inch loaf pan and bake at 350 degrees for 55-65 minutes or until toothpick comes out clean. Or three 5x2 1/2 for 45-50 minutes.
Cool 10 minutes before taking out of pans.
