PUMPKIN PIE SQUARES

List of Ingredients
3/4 cup all purpose flour
1/2 cup rolled oats
1/4 cup packed brown sugar
1/2 cup butter
1/2 cup chopped pecans

1 can (14 oz) pumpkin
1 can Regular or Low fat sweetened condensed milk
2 eggs, beaten
1 teaspoon ginger
1 teaspoon cinnamon
1/2 cup coconut (optional)
Combine flour, oats, and brown sugar; cut in butter until crumbly; stir in pecans. Press evenly into 9 inch square baking pan. Bake at 350 for 15 minutes.
Combine remaining ingredients, except coconut. Pour over crust in pan, sprinkle with coconut. Return to oven and bake 25 to 30 minutes or until set.
Serve warm or chilled. Garnish as desired.
Note: I forgot to add the chopped nuts to the crust so I mixed them with the coconut and sprinkled on top with the coconut. Good.
I also think this might be good baked in an 8 inch pan so the squares would be higher.
