This was in one of the Country magazines and was submitted by Anna Bargfrede.
List of Ingredients
1 cup sugar
3 tablespoons cornstarch
1 cup water (you may want to use a little more, maybe 1/4 cup)
3 tablespoons strawberry gelatin
2 pints stemmed strawberries, halved
One 9-inch baked pie shell
Whipped cream or non-dairy whipped topping (optional)
Instructions
Mix sugar, cornstarch, and water in saucepan; stir constantly, cooking until thickened. Remove from heat, stir in gelatin until dissolved. Pour over stawberry halves; mix well. Pour into pie shell; refrigerate until set. Top with whipped cream. Yield: 6-8 servings.
I personally do not like to mess up my fresh strawberry pie with whipped cream. Of course that is a personal choice.
