I did make some changes and will make others if I make it again. I used macadiamian nuts instead of the Brazil nuts and used candied pineapple which I didn't much care for in the recipe. Next time I think I will try it with Craisins or chopped apricots. And use about 1/4 less sugar as I thought they were a bit sweet.
Brazilian White Chocolate Chippers
1 3/4 cups all-purpose flour
1/2 cups quick oats
1/2 teaspoon baking soda
1 cup butter
3/4 cup brown sugar
1/2 cup granulated sugar (1/4 cup would be better)
1/2 teaspoon salt
1 large egg
1/2 tablespoon vanilla extract
1 cup white chocolate chips
1 cup coarsely chopped Brazil nuts (I used macadamian nuts)
3/4 cup dried pineapple, diced (used candied pineapple which I didn't like. Next time will use Craisins or chopped apricots)
Preheat the oven to 375 degrees.
In a medium bowl, mix the flour, oats, and baking soda.
In another bowl, cream the butter with the brown sugar, granulated sugar, and salt. Add the egg and vanilla and beat until smooth.
Add the dry ingredients to the creamed mixture and beat until combined. Fold in the chips, nuts, and pineapple pieces.
Drop spoonfuls on a lightly greased baking sheet. Bake 10 to 12 minutes or until edges begin to brown. Cool on a wire rack. Makes about 5 dozen
