    CARROT-RAISIN BARS

    List of Ingredients

    1 package carrot cake mix
    1/2 cup vegetable oil
    1/4 cup water
    2 eggs
    3/4 cup raisins
    1/2 cup chopped nuts
    1 tub ready to spread cream cheese frosting or your own recipe. Try using Splenda for the sugar.

    Recipe

    Heat oven to 350 degrees

    Grease and flour jelly roll pan 15 1/2 x 10 1/2, x 1/2 inch. I have a slightly larger pan which also works.

    Mix cake mix, dry (do not add what the back of the box says), eggs, oil, and water in a large bowl with a spoon. Stir in raisins and nuts, Spread evenly in in the pan. Bake 15 to 20 minutes or until it springs back when touched lightly in the center.

    Cool completely on a rack.

    Frost with frosting and sprinkle chopped nuts if desired.

    Cut into 8 x 6 rows. Yield 48 bars.
