Recipe Introduction
I am not sure if this would fit in the cookie catagory or the pie or dessert catagory. I shall put it in the cookie catagory.
List of Ingredients
1 cup flour
1/2 cup granulated sugar
1/4 teaspoon salt
1 T lemon zest
2/3 cup shortening
1 egg, slightly beaten*
4 or 5 tart apples, peeled, cored, and sliced. ( I used Granny Smith)
3/4 cup granulated sugar
1 teaspoon cinnamon
1 Tablespoon milk
Vanilla Glaze
2 Cups powdered sugar
1 Tablespoon plus 2 teaspoon milk
1/2 teaspoon vanilla
Combine flour, 1/2 cup sugar, salt, and lemon peel. Cut in shortening until mixture is like meal. Pat half of the crumb mixture, about 1 1/2 cups, into a buttered 9 inch square baking pan. Cover with the apple slices, 3/4 cup granulated sugar, and sprinkle with cinnamon.
Stir in the milk into remaining crumb mixture and spoon or sprinkle over apples. Bake at 375 degrees for 45 minutes, until apples are tender. Frost with glaze while warm. **
* Not sure where to put the egg, but I put it in the flour mixture. However it might also be good put in the the top half of the flour mixture.
**I forgot to add the glaze, but I've been told a scoop of vanilla ice cream is good with it. Recipe
