Recipe Introduction
These are made from purchased mincemeat which mostly contains fruit and sweeteners with little or no meat.
List of Ingredients
1 cup (1/2 pound) butter or margarine, at room temperature
1 1/2 cups firmly packed brown sugar
3 large eggs
3 cups all purpose flour
1/2 teaspoon EACH baking powder and salt
1 teaspoon EACH baking soda and ground cinnamon
1 cup rolled oats
2 cups prepared mincemeat
1 cup chopped walnuts
I also added 1 cup raisins which was not in the Sunset recipe
Spicy Glaze;
In a bowl, stir together 3 cups powdered sugar, 3/4 teaspoon ground cinnamon, and 3 tablespoons EACH brandy and water (or 6 Tablespoons water) until smooth. Set aside.
In a large bowl of an electric mixer, beat butter and sugar until creamy; beat in eggs. In another bowl, stir together flour, baking powder, salt, baking soda, cinnamon, and oats. Gradually add to butter mixture, blending thoroughly. Stir in mincemeat and walnuts (and the raisins if you add them)
Drop dough by level tablespoonfuls onto greased baking sheets spacing cookies 3 inches apart. Bake in a 400 degree oven until golden brown (8 to 10 minutes)
Transfer cookies to racks. Spread Spicy Glace and spread over tops of cookies while they're still warm; let cool completely, Store airtight. Makes 6 to 7 dozen cookies.
These cookies are good without the glaze too.
