List of Ingredients
1/2 cup (1/4 lb) butter or margarine, at room temperature
1 cup firmly packed brown sugar
1 1/2 cups all purpose flour
1/2 teaspoon EACH soda and salt
1 1/2 cups rolled oats
2 to 3 tablespoons water (start at 2 and go up by 1/2 teasoons if needed)
Fruit filling (recipe follows)
Recipe
In a large bowl of an electric mixer, beat butter and sugar until creamy. In another bowl, stir together flour, baking soda, and salt; gradually add to butter mixture, blending thoroughly. Add oats and water and mix until well combined and crumbly.
Pat half the crumb mixture firmly into a greased 9 x 13 inch baking pan. Spred with cooled filling (recipe below). Spoon remaining crumb mixture evenly over filling; pat down firmly. Bake in a 350 degree oven until lightly browned (about 35 minutes). Let cool in pan on a rack, then cut into 1 1/2 x 2 1/2 inch bars. Store covered. Makes about 2 1/2 dozen.
FRUIT FILLING:
In a small pan, combine
1/4 cup sugar
1 tablespoon corn starch. STIR IN
1 cup unsweetened apple juice
1 teaspoon grated lemon peel
1 tablespoon lemon juice
1 cup raisins
1/2 cup finely chopped lightly packed dried apricots
1/2 cup lightly packed snipped pitted dates.
Cook over medium heat, stirring, until mixture boils and thickens; let cool.
