    WHITE CHOCOLATE MACADAMIA NUT COOKIES

    This is one of my favorite cookies and of course there are no calories in them (tee hee). I got this off the internet. I have cut the recipe in half as the original recipe made 10 dozen cookies. This one makes about 5 dozen which is still a lot.


    List of Ingredients


    • 2 1/4 cups flour
    • 1 teaspoon baking soda
    • 1 teaspoon salt
    • 1 cup margarine, softened
    • 3/4 cup brown sugar, packed
    • 3/4 cup granulated sugar
    • 1 teaspoon vanilla
    • 1 egg
    • 4 1 ounce squares Bakers white chocolate, chopped into fairly large chunks
    • 1/2 (about 3 1/2 ounces) of a 7.25 ounce jar macadamia nuts, coarsely chopped (eat the rest)


    Instructions


    1. In a medium bowl, combine flour, baking soda, and salt. Set aside. In a electric mixer, combine margarine, sugar, and brown sugar. Beat until smooth and slightly fluffy. Add eggs and vanilla and mix. Gradually add flour mixture. Stir in chocolate chunks and nuts. Drop by generous rounded teaspoons onto a parchment lined cookie sheet ( a regular cookie sheet will do without the parchment if you don't have any on hand ). Bake in a preheated oven 375 degrees until golden brown on top, about 10 to 12 minutes. Remove from baking sheet and cool on rack. Makes about 5 dozen cookies.


    Final Comments


    I do not have a rack that will hold 5 dozen cookies so I cool them on paper towels on the counter. When the cookie is slightly cooled I will set it up slightly on the cookie beside it so air can get underneath
