This recipe is from the Crockery cookery by Mable Hoffman. One of my husbands favorites.
List of Ingredients
1 (6 ounce) package of stove top stuffing
1 1/4 cup water
1/4 cup sauterne wine
12 carrots, peeled and cut into 2-inch pieces
1 (4 to 5 pound) roasting chicken
salt and pepper
Instructions
Prepare dressing according to package directions with 1 1/4 cups water. Set aside to cool. When cool, stir in sauterne. Meanwhile in saucepan, cook carrots in small amount of water for 5 minutes. Drain and place in bottom of lightly greased crock pot. Rinse and dry chicken; stuff with dressing. Place on top of carrots in slow cooking pot. Sprinkle with salt and pepper. Cover pot and cook on low for 6 to 8 hours or until chicken is tender. If browner chicken is preferred, place in baking pan in 400 degreees in oven for about 15 minutes. Makes 6 to 7 servings.
The amount of servings makes me laugh. In our family it only makes 2 servings.
There is always left over stuffing that I can't get in the chicken, so I put the left overs in a foil packet and lay it on the side of the chicken while cooking.
