Recipe Introduction
Yummy and is good cold too. I had fixed my peaches beforehand and froze them to use in this cobbler.
List of Ingredients
Heat oven to 400 degrees
Butter a round or square 8 inch oven proof pan
2 pounds of peaches (washed, pitted, and sliced)
4 ounces unsalted butter
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
2 tablespoons corn starch
3/4 cup brown sugar
1/2 cup flour
1/2 cup sugar
1/4 teaspoon baking powder
1/4 teaspoon salt
2 tablespoon softened butter
1 egg
Mix the first six ingredients in a saucepan over medium heat until butter is melted and slight thickening has occured (approx. 8 to 10 minutes)
Remove from heat and pour into the buttered 8 inch round or square pan.
For Topping:
Mix the dry ingredients first and add the butter and egg. Mix thoroughly. Spoon over top of filling to cover most of the dish (mold with your hands). Place on a baking sheet to catch any bubbling over and place on middle rack of the pre-heated oven 400 degrees for 30 minutes.
Serves four.
