SWEET AND SOUR PORK
Recipe Introduction
I got this recipe out of a newspaper years ago. Make the sauce first and set aside.
List of Ingredients
- 2 pounds cubed tender pork (use pork tenderloan cut in 1 inch cubes)
- 1 egg beaten
- 1/2 cup cornstarch
- 5 tablespoons salad oil
- 1 medium onion cubed
- 1 medium carrots, cubed
- 1 green pepper, cubed
- 1 garlic clove, mashed
- 1/2 cup pineapple chunks, drained
- 2 medium tomatoes, cubed
- sweet and sour sauce--see below
Instructions
- Dip the pork pieces in the egg. Drain. Roll the pork pieces in corn starch. Heat large frying pan with 3 tablespoons of the oil. Brown pork, turning constantly (7 minutes). Remove and scrape and discard brown particles. Add 2 tablespoons oil. Add the cubed onion, carrots, mashed garlic, and cubed green pepper, stirring constantly. Add pineapple, tomato, and sauce. Stir until mixture boils. Add pork and cook and stir 1 minute longer. Serve with hot rice.
- SWEET AND SOUR SAUCE:
1 tablespoon cornstarch
1/3 cup brown sugar
1/2 teaspoon grated fresh ginger root or 1/4 teaspoon ground ginger
1 teaspoon soy sauce
1 teaspoon sherry
2 tablespoons wine vinegar
1/4 cup chicken broth
Blend the cornstarch and brown sugar. Stir in the ginger. Add the soy sauce and sherry, wine vinegar and chicken broth. Set aside. You might want to double the sauce depending on how much pork you have.
