    List of Ingredients

Hints for different things plus food
Keeping windows frost-free - Rub the inside of windows
with a sponge dipped in a saltwater solution and rub
dry; the windows will not frost up in sub-freezing
weather. Rubbing a small cloth bag containing salt that
has been moistened on your car's windshield will keep
    snow and ice from collecting

If you just need a few drops of lemon juice from a lemon, puncture it, squeeze out what you want and refrigerate lemon for later use. It still will be fresh and flavorful

    Curly Bacon?

To keep bacon from curling, dip it in cold water before
putting it in the fry pan.

When using fat free or low fat cheese in dishes that they need to be melted, spray them lightly with cooking spray. The cheese will melt smoothly.

Candied Orange, Grapefruit or Lemon Peel

This recipe, which is a frugal way to use up an over-abundance of citrus fruit, is from Tawra Jean Kellam's wonderful book Not Just Beans: 40 years of Frugal Family Favorites.

peels from 3 large oranges, grapefruits or lemons*
    1 teaspoon salt
    3 cups sugar
    water

Cut the peel on each fruit into quarters. Pull the peel off in these quarter sections. Slice peel into 1/4 inch-wide strips. In a saucepan add salt and cover with cold water. Boil 15 minutes, pour off water and add fresh water. Boil 20 minutes. Change water again and boil another 20 minutes. Drain and cover with 2 1/2 cups sugar and 1 cup water. Simmer, stirring constantly, until all the syrup has boiled away. Do not let the peels scorch. Spread on wax paper. Roll peels in remaining sugar. Let dry. Store in an airtight container. Keeps one week or can be frozen.

*If non-organic fruit is used wash peels thoroughly before peeling.

Another one for CANDIED ORANGE PEEL
1 Quart (1/4-inch wide) orange strips (about 15 oranges)
    1/2 t Salt
    2 c Sugar
    1 c Water
    Sugar

Make sure there is no white on the peel before you begin.
    It will makes it bitter.

Place orange peel in water to cover in a Dutch oven; add
salt. Bring to a boil, and boil 20 minutes. Drain. Repeat
boiling procedure twice without salt, and set orange peel
aside. Combine 2 cups sugar and 1 cup water in a small
saucepan; bring to a boil and cook, stirring often, until
syrup spins a thread, about 7 minutes (234 degrees). Add
orange peel; simmer 30 minutes, stirring often. Drain
    orange peel well.

Discard syrup. Roll peel, a few pieces at a time, in sugar.
Arrange in a single layer on wire racks; let dry 4 to 5
hours. Store in an airtight container.

    Yield: about 1 pound.

TIP: Collect the orange halves over a period of time and
refrigerate them in a plastic bag until you have enough
to prepare candied peel. You may candy *whole* orange
halves, if you wish. Just boil them without cutting them
into strips. When cooled, they make lovely containers for
candies and nuts, or holiday desserts.

Removing most of the "gaminess" from venison, soak in whole milk overnight; keep refrigerated.

    From TOH:
All-purpose, self-rising and bread flour can be stored in an airtight container in a cool, dry place for 1 year. Whole wheat and rye flour, on the other hand, keep best in a moisture-proof container in the refrigerator for up to 6 months. Be sure to allow flour that has been kept in the refrigerator to come to room temperature before using it in yeast bread recipes. Storing flour in the freezer is not recommended.
    **********************************
You can substitute old-fashioned oats for quick-cooking oats in equal proportions in most recipes. But because old-fashioned oats are the whole oats, your baked goods may have more texture

When a recipe calls for eggs or egg whites at room temperature, let them sit on the counter for about 30 minutes before using as called for in your recipe.

    Pasta Tips:

Tubular pasta shapes work best with chunky sauces &
delicate noodles pair well with light sauces.

To keep the pasta water from boiling over, spray the
inside edge of the cooking pot with a bit of nonstick
    cooking spray.

Cover the pot of water in order for it to reach the
    boiling point quickly.

Adding salt to the cooking water just before adding pasta
will enhance its flavor and enable it to absorb sauce.

Not a good idea to combine different types of pasta in
the same cooking pot because cooking times may vary.

To determine pasta doneness, some people throw a piece
against the wall; if it sticks.it's done! A more reasonable
method is to taste it: if it's just a bit chewy, it's al
dente, meaning cooked "to the tooth" and perfectly done.

Keep bread fresh longer by placing a rib of celery in the bread bag.
    **********************************
Add herbs and spices little by little while at the same time tasting your recipe.
Some herbs can infuse a bitter taste if added more than needed.
    **********************************
    A Heloise tip:
    Make Your Own Bouquet Garni
To create this seasoning, make a mixture of 1-part thyme, 2-parts of parsley and 1 bay leaf. Wrap these herbs in cheesecloth and then drop cheesecloth into the dish for seasoning. Remove bay leaf after cooking because it doesn't soften and could be a choking hazard.
    **********************************
When baking with raisins, soak them first in water for about 20 minutes, then drain and use them in your recipe. They will be tender rather than chewy. You can also add rum or rum extract to add flavor to the water.
    **********************************
To save unused fresh herbs before they lose their freshness, chop finely and put a spoonful into each cavity of an ice cube tray. Then fill each cavity with water, and freeze. When frozen, remove herb cubes from tray and store in a freezer ziploc bag. When you need fresh herbs for a stew or sauce, just pop in a cube or two!

    Baby Formula Removal:
Don't buy special cleaners to get out baby formula
stains, use a little isopropyl alcohol on the stain.
    Works like a charm.
    **********************************
Want to clean your coffee maker? Here is
a quick, easy way to do it. Fill your coffee maker with warm water,
drop a tablet of Efferdent Denture Cleaner in the water and brew as
usual. When the cycle is complete, rinse and your machine and pot are
    sparkling clean.
    **********************************
Banana Bread and No Bananas try this:
If you want banana bread and don’t have bananas on hand you can substitute banana baby food for the mashed bananas. Two small jars of baby food equals 1-cup mashed bananas. Baby food is easy to store and always handy.
    **********************************
When preparing a meal using grated cheese, chopped onions, etc., prepare more than the recipe calls for and refrigerate the rest for another meal.
    **********************************
Keep a notepad on the front of the refrigerator for your shopping list. When you run out of something write it on the list right away. Encourage family members to do the same.
    **********************************
Use top-quality typewriter correction fluid to cover nicks, chips, and scratches on enameled ranges and refrigerators, porcelain tiles, and sinks. Works like a charm. And it comes in a variety of colors.
    **********************************
Before wallpapering a wall, apply a coat of clear
varnish to any grease spots. This will prevent the
grease from soaking through the new paper.
