WHEN YOU'RE OUT OF . . .
Sweetened Condensed Milk
1 cup instant nonfat dry milk
2/3 cup sugar
1/2 cup boiling water
3 T. butter, melted
Combine all ingredients in blender and whirl until smooth._ Makes about the same amount as one can of condensed milk.
ALLSPICE, 1_t. GROUND
1/2 t. cinnamon
1/4 t. nutmeg
1/4 t. ground cloves
FINES HERBS, 4 t.
1 t. chervil
1 t. chives
1 t. tarragon
1 t. parsley
ASIAN FISH SAUCE, 1 T.
2 t. soy sauce
2 mashed anchovies
FIVE SPICE POWDER, 5 T.
1 t. ground cinnamon
1 t. ground cloves
1 t. fennel seed
1 t. star anise
1 t. szechwan peppercorns
ITALIAN HERB SEASONING, 2 T.
1 t. oregano
1 t. marjoram
1 t. thyme
1 t. basil
1 t. rosemary
1 t. sage
PUMPKIN PIE SPICE, 1 T.
1/2 t. cinnamon
1/8 t. ground ginger
1/8 t. ground nutmeg
1/8 t. ground mace
1/8 t. ground cloves
CINNAMON SUGAR, 1 CUP
7/8 cup granulated sugar or superfine sugar
2 T. ground cinnamon
TAMARIND PASTE, 1 T.
1 t. dates
1 t. prunes
1 t. dried apricots
1 t. lemon juice
TOMATO SAUCE, 1 CUP
3/8 cup tomato paste
1/2 cup water
SEASONED RICE VINEGAR, 1 T._
1 T. rice vinegar or 1 T. white wine vinegar
1/2 t. sugar
1/8 t. salt
CHILI SAUCE:_ Ketchup with prepared horseradish and lemon juice to taste.
FRESH CHIVES:_ Green onions, including the tops.
CHORIZO SAUSAGE:_ Hot Italian sausage, seasoned with garlic and ground red pepper.
FISH STOCK:_ Equal parts clam juice and water.
DRIED CURRANTS:_ Chopped dark raisins.
GRAHAM CRACKER CRUMBS, 1 CUP:_ 15 graham crackers, ground in a blender OR 1 cup vanilla wafer crumbs.
FRESH HERBS, 1 T. MINCED:_ 1 t. dried, of the same kind.
FRESH HORSERADISH, 1 T. GRATED:_ 2 T. prepared, well-drained.
HOT SAUCE (TABASCO):_ use red pepper flakes or ground red pepper.
LEMON GRASS, 1 T. MINCED:_ 1 t. grated lemon rind.
PREPARED MUSTARD, 1 T. :_ 1 t. dry mustard mixed with 2 t. wine vinegar, white wine or water.
PANCETTA:_ Cooked, lean bacon.
PINE NUTS:_ Walnuts or Almonds.
PROSCUITTO:_ Country ham.
SAKE OR RICE WINE:_ Dry sherry or dry vermouth.
SHALLOTS:_ Minced onion with half a small clove of minced garlic.
CHINESE BLACK VINEGAR:_ Balsamic vinegar.
WHITE WINE FOR COOKING:_ Dry vermouth.
CAKE YEAST, 5/8-OUNCE CAKE:_ 1 packet active dry yeast.
