    BEEF AND ASPARAGUS STIR FRY

    Instead of asparagus you could also use green beans or brocolli. I sometimes add sliced fresh mushrooms. You could also use thinly sliced chicken breasts.


    List of Ingredients


    • 1 1/2 pounds of sirloin or flank steak cut in very thin slices
    • 1/2 garlic clove, mashed
    • 2 Tablespoons soy sauce
    • 2 tablespoons sherry
    • 1 tablespoons oil
    • 2 pounds fresh asparagus, brocolli, or green beans ( or a combination)
    • 1/2 cup sliced onion
    • 1/2 cup sliced carrot (gives it color)
    • 1/2 cup beef or chicken bouillon
    • 1 tablesppon soy sauce
    • 1 tablespoon cornstarch
    • 1 tablespoon sherry


    Instructions


    1. Cut meat in very thin slices about 1 inch long across the grain. Blend the 2 tablesoons of soy and the 2 tablespoons sherry. Add the garlic and meat and marinate for 1 hour. Heat heavy skillit to smoking hot with a brushing of oil. Add the drained meat and fry until brown on both sides. Dosen't take but 2 or 3 minutes. Remove and set aside.
    2. Wash and snap off the tough sections of the asparagus and slice in 1/2 in wide pieces cut on the diagonal. Peel and cut the carrots thinly in diagonal slices. (If using green beans or brocolli cut the beans diagonally and the brocollli in small pieces)
    3. Put 1 tablespoons oil in skillet and saute onion for 1 minute. Add the asparagus (mushrooms, beans, or brocolli) and saute 2 minutes. Add the beef or chicken bouillon, cover and simmer until tender crisp, about 5 minutes.
    4. Mix the the cornstarch with the remaining soy and sherry in a small bowl and mix until smooth.
    5. Add the browned meat and the cornstarch mix to the vegetables and mix until sauce is thick. About 1 minute.
    6. Serve with hot rice.
