APPLE-WALNUT CHICKEN SALAD

Jo made this many times doubled--enough to fill a turkey roaster. It was served at The Roundup held by Jackie in Wisconsin. Sooooo good!
List of Ingredients
Original recipe - serves 2
Apple-Walnut Chicken Salad
5 oz. cooked chicken breast, 1/2" dices
1/2 cup chopped celery
3/4 cup chopped apple
2 oz. chopped walnuts
1 tablespoons raisins
1/3 cup preoared low-sugar Italian dressing
Bibb lettuce
in medium bowl, gently stir together the chicken, celery, apple. walnuts, and raisins. Pour dressing over the mixture and toss gently to coat.
Serve on Bibb lettuce.
Addendum, my changes:
1. Apples: I use two or more different apples (granny smith, and a red apple - do not peel).
2. Nuts: You can use walnuts, pecans, or whatever is your favorite nut.
3. Raisins:You can use dark or light raisins. Or craisins, dried cherrries, dried blueberries - or a mixture of any/all of these.
4. Other additions I like: diced cucumber, chopped green onion, halved grape/cherry tomatoes, halved green grapes - any or all at once works surprisingly well.
5. Dressing: Any raspberry dressing goes well. I like a cherry dressing. Sometimes I mix cherry juice/concentrate right into the Italian dressing. You can find some great cherry products here:

6. Lettuce: I use any green-leaf lettuce. I like a mixture of dark green and iceburg lettuce best.
