CHICKEN SALAD
Recipe Introduction
We often have this one for dinner served with rolls or muffins.
List of Ingredients
- 2 1/2 cups diced cooked chicken
- 4 or 5 bacon strips, cooked and crumbled
- 1 small can sliced water chestnuts
- 1/ cup sliced celery
- 1 cup halved red or green grapes. (red grapes makes a more colorful salad)
- 3/4 cup mayonnaise
- 1 to 2 tablespoons dried parsley flakes
- 2 teaspoons finely minced onion
- 1 teaspoon lemon juice
- 1/4 teaspoon ground ginger
- dash of worcestershire sauce
- salt and pepper to tase.
- 1 or 2 dollops of Ranch dressing (optional)
Instructions
- Combine chicken, bacon, water chestnuts, celery, and grapes in a large bowl. Set aside. In another bowl, whisk together remaining ingredients. Add to the chicken mixture and toss to coat. Chill. Makes 4 to 6 servings.
Final Comments
Update: July 1, 2000. We had this recipe for dinner last night and just to be different I added a healthy dollup of Ranch dressing to the dressing and it made the salad even better.
