MARINATED BEAN SALAD
This recipe makes a lot and is good for a pot luck of buffet dinner. It is also a very colorful salad.
Mix together in a large bowl:
1 small can wax beans
1 small can green beans
1 small can kidney beans
1 small can garbanzo beans
Add and cut or slice in bite size pieces:
1 small cucumber
1/4 red cabbage
8 to 10 radishes
3 to 4 stalks celery
1 small stalk brocolli
same amount of cauliflower pieces
6 to 8 mushrooms
2 carrots
1 green bell pepper
1 red bell pepper
1 small red onion
1 small white onion
1 pint quartered cherry tomatoes
2 ripe avacados.
Make marinate in blender on low:
1/2 cup salad oil
1 cup apple cider vinegar
1/2 cup water
1/2 cup sugar
salt, pepper, garlic powder and onion powder to taste
Combine marinade ingredients (varying the amounts to suit your taste). Toss the other ingredients with the marinade until all are coated. Refrigerate at least 2 hours before serving. Can be made ahead BUT add the tomatoes and avacados just before serving if you do.
