NORWEGIAN CUCUMBER SALAD
List of Ingredients
- 3 medium sized cucumbers
- 1 tablespoons salt
- 2 tablespoon sugar
- 3/4 teaspoon black pepper
- 2 1/2 tablespoons parsley or dill
- 1 tablespoon water
- 1 cup wine vinegar
Instructions
- Pare and slice thin the cucumbers into a bowl. Sprinkle with salt. Mix with hands, turning them over in salt. Press a plate down over cucumbers and let stand, about 1 hour. Drain the juice from them.
- Mix a dressing of the rest of the ingredients. Pour over cucumbers. Let stand 15 minutes or more. Refrigerate. 6 servings.
