AUNT ORAL'S CHILI

My Aunt Oral
List of Ingredients
1 pound ground lean beef
1/4 pound ground beef suet
1 cup chopped celery
1/2 cup chopped onion
5 large cloves chopped garlic
2 medium size cans kidney beans
1/4 cup grated raw carrots
1/2 cup chopped white potatoes
1 cup lard
1 small can Italian style tomato sauce
1 small can tomato paste
1 medium size can imported tomatoes (put through sieve)
1 tablespoon salt or salt to taste
1/2 teaspoon black pepper
1/2 teaspoon brown sugar
1/2 can Mexican chili powder(2 or 3 tablespoons perhaps)
1 tablespoon flour
1 cup water
Recipe
First put lard in skillet; turn on heat; add ground suet; when suet browns skim off the browned fat, add onions and garlic; when they begin to brown add ground meat mashing constantly with a potato masher till it begins to brown. Add celery, carrots, beans, tomato sauce, tomatoes, and potatoes. Cook briskly for on hour stirring constantly. Add salt, pepper, chili powder, and sugar. Dissolve flour in cup of water, add gradually to meat mixture still stirring. Cook 20 minutes longer until thickened. Serves 8 generously.
Note: My aunt made this when I was visitng during my summer between college semesters and it was so good. However, now when I see all the fat in it I shudder. I'm sure you could just add a little oil and brown the meat with the same results.
