BEEF BARLEY SOUP

Recipe Introduction
A delicious hardy soup made from a recipe of Louri's mother
List of Ingredients
1 and 1/2 pounds of lean ground beef
2 cups thinly sliced carrots
1 cup chopped onion
1 cup sliced celery
1/2 cup chopped green pepper
7 to 8 cloves of garlic, chopped
3 (three) 14 oz cans of beef broth
1 (one) 28 oz can of diced tomatoes
1 (one) 8 oz can of tomato sauce
3/4 cup of quick cooking barley (after cooking, it swells to 2 to 3 cups) More, the better!!
2 bay leaves or dried chopped basil
Worcestershire sauce to taste (I use about 1/4 cup or more)
Dried oregano to taste
pepper/salt
In large pan, cook beef, carrot, onion, celery, green pepper and garlic till tender. (You may have to drain, but all the good nutrients are in there, so don’t drain it all)
Stir in beef broth and all remaining ingredients. Bring to a gentle boil, then simmer with a lid for about an hour.
