SUE'S BEAN AND HAM SOUP
List of Ingredients
- 2 cups shredded ham and a ham hock
- 1 cup chopped celery
- 1 cup chopped carrots
- 1 cup chopped onion
- 1 #28 can, tomatoes, chopped
- 1 1/2 quarts water
- salt and pepper, to taste
- rosemary, to taste
- thyme, to taste
- dry mustard, to taste
- 2 cups beans (any kind or mixed), soaked overnight and drained
Instructions
- Cover ham with water. Cook slowly for 1/2 hour. Add the beans which have been soaked overnight and drained, and the vegetables. Simmer for 2 1/2 hours. Season.
- Crockpot: Put all the ingredients in the pot and cook on high for 8 hours. Make sure you have soaked and drained the beans overnight.
