    MACADAMIAN NUT DRESSING

    Recipe Introduction


    This is a recipe of my beloved cousin, Eleanor Cooper, now passed on. She was also an excellent potter besides a wonderful cook.


    List of Ingredients


    • 1 quart bread crumbs
    • 1/2 cup chopped onion
    • 1/4 clove of garlic, minced
    • 1/4 cup chopped celery
    • 1/2 cup chopped celery leaves
    • 1/4 cup butter or margarine
    • 1/4 teaspoon sage
    • 1/4 teaspoon thyme
    • 1/4 teaspoon crushed bay leaf
    • 1 small can (5 ounces) water chestnuts. Recipe doesn't say butI would use sliced
    • 3/4 teaspoon salt
    • 3/4 teaspoon pepper
    • 1 beaten egg
    • 1 1/2 teaspoon brandy or wine
    • 1/2 cup chopped macadamian nuts


    Instructions


    1. Rub inside of bird cavity with brandy or wine. Use rest when making stuffing.

    2. Saute onions, celery, and garlic in butter. Add the bread crumbs and the remaining ingredients. Toss lightly.

    3. Milk or stock can be added if it is too dry. However it is usually not needed. Stuff bird lightly with stuffing.
