MACADAMIAN NUT DRESSING
Recipe Introduction
This is a recipe of my beloved cousin, Eleanor Cooper, now passed on. She was also an excellent potter besides a wonderful cook.
List of Ingredients
- 1 quart bread crumbs
- 1/2 cup chopped onion
- 1/4 clove of garlic, minced
- 1/4 cup chopped celery
- 1/2 cup chopped celery leaves
- 1/4 cup butter or margarine
- 1/4 teaspoon sage
- 1/4 teaspoon thyme
- 1/4 teaspoon crushed bay leaf
- 1 small can (5 ounces) water chestnuts. Recipe doesn't say butI would use sliced
- 3/4 teaspoon salt
- 3/4 teaspoon pepper
- 1 beaten egg
- 1 1/2 teaspoon brandy or wine
- 1/2 cup chopped macadamian nuts
Instructions
- Rub inside of bird cavity with brandy or wine. Use rest when making stuffing.
- Saute onions, celery, and garlic in butter. Add the bread crumbs and the remaining ingredients. Toss lightly.
- Milk or stock can be added if it is too dry. However it is usually not needed. Stuff bird lightly with stuffing.
