BROCCOLI AND RICE CASSEROLE
List of Ingredients
- 2 cups wild rice and 1 cup white rice OR 2 packages Uncle Bens wildrice/white rice combination
- 2 bags chopped frozen packages of broccoli (thawed) OR the equivalent amount of fresh broccoli, cut in small pieces.
- 2 cans cream of mushroom soup
- 1 small can of sliced small black olives
- 1 stalk of celery, sliced
- 3 bunches green onions or 1 large regular onion, chopped
- 12 mushrooms, sliced and sauted in wine, butter, lemon juice, and garlic powder
- 1 pound of chedder cheese, shredded
Instructions
- Pre cook the wild and white rice OR the 1 packages of Uncle Bens wild rice/white rice combination.
- Mix together the COOKED rice all the rest of the ingredients, except for 1/2 to 1 cup of the shredded cheese. Season to taste with salt, pepper, and garlic powder.
- Pour into a large casserole dish and sprinkle the remaining cheese over top. Bake 350 degrees for 1 hour.
