    STUFFED BAKED POTATOES


    List of Ingredients


    • 3 large baking potatoes
    • 1 1/2 teaspoon vegetable oil
    • 1/2 cup green onions
    • 1/2 cup butter or margarine, divided
    • 1/2 cup light cream ( I have used milk)
    • 1/2 cup sour cream
    • 1 teaspoon salt
    • 1/2 teaspoon white pepper
    • 1 cup shredded chedder cheese
    • paprika


    Instructions


    1. Scrub potatoes, dry, and rub all over with oil. Pierce with fork and bake 400 degrees until done. Cool to touch. Cut carefully in half lenghwise and carefully scoop out pulp leaving a thin shell.
    2. Place pulp in bowl. saute the onions in half the butter until tender. Add the onions to the potato pulp along with the cream, sour cream, salt and pepper. Beat until smooth. Fold in the cheese. Stuff the potato shells and place in 13 x 9 inch baking pan. Melt remaining butter and drizzle over potatoes. Sprinkle with paprika.
    3. Bake 350 degrees for 20 to 30 minutes until heated thru. Potatoes may be stuffed ahead of time and refrigerated or frozen. Allow additional time for reheating.
    4. You may also add crumbled bacon, minced ham, or small pieces of cooked broccoli to the potato pulp.
