    SWEET POTATOES AU GRATIN

    List of Ingredients


    • 2 pounds (about 4 medium) sweet potatoes or yams, peeled and thinly sliced
    • 3/4 cup whipping cream
    • 1/2 cup chicken broth
    • 1/4 teaspoon ground nutmeg
    • 1/4 teaspoon salt (optional)
    • 1/8 teaspoon white pepper
    • 1 cup (5 ounces) firmly packed shredded Swiss cheese


    Instructions


    1. Spread potato slices evenly in a shallow 1 1/2 to 2 quart casserole dish. Mix cream, broth, nutmeg, salt, and pepper. Pour over potatoes. Cover tightly. (If made ahead chill up to overnight)

    2. Bake in a 325 oven for50 minutes (60 minutes if chilled). Uncover and continue baking for 30 minutes. Sprinkle with cheese and continue baking, uncovered, until potatoes are tender when potatoes are pierced and cheese is lightly browned, 20 to 30 minutes longer. Remove from oven and let stand 5 minutes. Makes 6 servings.

    3. It takes almost 2 hours total time to bake. So make sure you plan accordingly. If I am baking turkey and I have enough room I will add this to the last two hours of baking.
