    SWEET POTATO PUFF

    List of Ingredients




    3 cups fresh (cooked) yams or sweet potatoes (about 5)
    4 or 5 egg whites
    1/4 cup sugar
    1 teaspoon vanilla
    2 tablespoons flour

    Topping

    3 tablespoons flour
    1/2 cup brown sugar
    2 tablespoons butter
    1/2 cup chopped pecans

    Preheat oven to 350 degrees. Apply vegetable oil cooking spray to 1 1/2 quart casserole dish. Using a food processor or mixer ( I found it was better if I mashed the potatoes first with a potato masher), smooth together all sweet potato mixture ingredients and pour into casserole dish. To make topping, crumble flour, brown sugar, and butter in small bowl; stir in pecans. Sprinkle over sweet potato mixture. Bake for 30 minutes or until golden brown.

    Yield, about 10 servings.
