1 PACKAGE PLAIN YELLOW CAKE MIX
1 PACKAGE (3.4OZ) VANILLA INSTANT PUDDING MIX
4 LARGE EGGS
1 CUP BEST QUALITY APPLE CIDER
1/2 CUP VEG OIL
3/4 TEP GROUND CINNAMON
1/4 TSP GROUND CLOVES.
GLAZE:
1 CUP CONFECTIONERS' SUGAR
2 TBS APPLE CIDER
1/2 TSP GRATED LEMON ZEST
Recipe
1. PRHEAT OVEN TO 350 DEGREES. LIGHTLY MIST A 12 CUP BUNDT PAN WITH VEG OIL SPRAY, THEN DUST WITH FLOUR. SHAKE OFF EXCESS FLOUR. SET ASIDE
2 PLACE THE CAKE MIX, PUDDING MIX,EGGS,CIDER,OIL,CINAMON, AND CLOVES IN A LARGE MIXING BOWL AND BEAT ON LOW SPEED FOR 30 SEC. SCRAPE DOWN SIDES OF TH BOWL WITH A RUBBER SPATULA.
INCREASE THE MIXER TO MEDIUM AND BEAT 2 MIN. MORE, SCRAPING SIDES AS NEEDED. pOUR BATTER INTO THE PREPARED PAN, SMOOTHING TOP WITH SPATULA. PLACE IN OVEN.
3. BAKE THE CAKE UNTIL IT SPRINGS BACK WHEN LIGHTLY TOUCHED. 42 TO 48 MIN. REMOVE THE PAN FROM THE OVEN AND PLACE ON WIRE RACK FOR 20 MIN.
4. MEANWHILE,PREPARE THE GLAZE. PLACE THE SUGAR,CIDER AND LEMON ZEST IN A SMALL SAUCEPAN OVER LOW HEAT. HEAT,STIRRING INTIL MIXTURE IS SMOOTH.
5. INVERT CAKE ONTO CAKE PLATTER, POUR GLAZE OVER THE CAKE.
