    1 packet unflavored gelatin
    1/2 cup water
    1/2 cup apple juice concentrate
    3 cups sliced fresh or frozen strawberries
    1 graham cracker crust
    Add strawberries (reserving a few for garnish!)
    to the cooled gelatin mixture. Place strawberry mixture
    in the refrigerator and chill until slightly gelled.
    Pour into crust and chill until firm.

    Soften the gelatin in 1/4 cup of water.
    Combine the remaining 1/4 cup water and apple
    juice concentrate in a saucepan and bring to a boil.
    Remove from heat and add the gelatin mixture.
    Mix until gelatin dissolves and cool.


    Sugar-Free Apple Pie
    6 cups peeled and sliced (a variety of apples adds a nice flavor!)
    2 tablespoons cornstarch
    1 teaspoon cinnamon
    1/4 teaspoon nutmeg
    1 tablespoon butter
    1 large can of frozen apple juice concentrate
    pastry for a double crust

    Preheat oven to 425 degrees.
    Place apple juice concentrate in pan and add
    cornstarch (while cold). Cook until mixture starts to
    thicken. Remove from heat and add spices, butter,
    and apples. Pour into crust. Add top crust and bake
    for 30 minutes. Reduce oven temperature to 375 degrees
    and cook for an additional 30 minutes.
