    List of Ingredients


    • 1-1/2 pounds boneless pork, cut into 1/2 inch cubes
    • 1 tbs oil
    • 1 can [15oz] black beans,rinsed and drained
    • 1 can cream of chicken soup,undiluted
    • 2 cans chopped green chilies, 4 oz size
    • 1 cup quick-cooking brown rice
    • 1/4 cup water
    • 2-3 tbs salsa
    • 1 tsp cumin
    • 1/2 cup shredded cheddar cheese


    Instructions


    1. In a large skillet,,cook pork in oil until no longer pink; drain.
    2. Add the beans,soup,tomatoes,chilies,rice,water,salsa and cumin; cook and stir until bubbly.
    3. Pour into an ungreased 2 qt baking dish. Bake, uncovered, at 350 degrees for 30 minutes. or until bubbly.
    4. Sprinkle with cheese; let stand a few minutes before serving.


    Final Comments


    Yield: 6 servings.
