Banana Banana Bread Pudding

- 2 ripe bananas
- 5 large eggs
- 2/3 cup firmly packed brown sugar
- 3 cups skim milk
- 1 1/2 tsp vanilla
- 12 cups white bread crumbs
- 1/2 cup raisins
Instructions
- Preheat oven to 325 degrees. Lightly butter 13x9 inch baking dish.
- In a large bowl, mash the bananas until smooth.
- Shisk in the eggs until combined. Add the brown sugar, milk and vanilla; mix until well-blended.
- Add the bread cubes and raisins; toss to moisten the cubes with the mixture.
- Scrape the mixture into the prepared dish.
- bake for 45 to 50 minutes, or until the mixture is set. serve warm.
- cover and refrigerate any leftovers for up to 5 days; to serve, reheat.
