Red Beans and Rice
List of Ingredients
- 1 1/2 cups onion,chopped
- 5 garlic cloves,sliced
- 1 15oz can red kidney beans-rinsed and drained
- 1 15oz can pink beans - rinsed and drained
- 1 bay leaf
- 1 tsp oregano
- 2 tbs chili powder [to taste]
- 1 tsp ground cumin
- 1 tsp coriander
- 1 tsp crushed red pepper flakes [to taste]
- 1 cup tomato juice
- 1 cup cooked rice. [I use white]
- salsa
- GARNISHES
- scallions--chopped
- Fat Free Sour Cream
- cilantro [optional]
Instructions
- Heat a large nonstick skillet over medium heat.
- Add garlic and onion and let it cook for a moment until the onions are translucent and the garlic is browned lightly,do not burn.[ Will taste bitter.]
- Add the beans and bay leaf. Stir a couple of times and then add the oregano,dash of salt and the spices.
- Add the tomato juice and cook for a few moments. If it gets dry, add a little water.
- Add cooked rice and cilantro [or your favorite herb]
- Garnish with scallions and sour cream
