    Pasta e Faglioli [Italian Veg. Soup]


    List of Ingredients


    • 1 lb chicken or turkey italian sausage. Casings removed
    • 1 medium onion, chopped
    • 1 tsp basil
    • 1/2 tsp parsley
    • 1 tsp oregano
    • 1/2 tsp pepper
    • 1 can [28oz] chopped tomatoes [seasoned or plain]
    • 2 [14oz] cans any type beans [I prefer Great Northern and Kidney]
    • 2 cans [14oz ea] no fat beef broth
    • 2 cups water
    • 2 med. zucchini,sliced
    • 2 med. carrots,sliced or shredded
    • 2 stalks celery,chopped
    • 4 oz mushrooms,chopped and saute'ed
    • 1 cup spinach, chopped [I use fresh]
    • 2 cups cooked chunky pasta
    • Parmesan cheese, [optional]


    Instructions


    1. In a large pot, saute' sausage and onion until cooked through. Break sausage into small pieces. Drain
    2. Add everything else except vegetables and pasta. Bring to a boil,reduce heat and simmer 5 min. Stir in vegetables and noodles until everything looks balanced, simmer 5 min. Soup is done, although I usually simmer 30min. to blend the flavors more. Sprinkle with Parmesan and serve with crusty bread.

    3. Serves about 10 people
