Cheese Stuffed Bell Peppers

- 6 small green peppers
- 1/2 pound cheddar cheese 1/4" cubes
- 1/4 pound swiss cheese
- 1/4 pound gruyere cheese 1/4" cube
- 1 medium tomato cubed
- 1/2 tsp basil leaves
- 1/4 tsp salt
- dash pepper
Instructions
- In boiling water [2" deep] in 5 qt dutch oven. In the water parboil peppers until tender-10 minutes.
- Drain peppers. Cut off tops remove seeds. Place, standing upright, on lightly greased baking dish.
- In medium bowl, combine, cheeses, toss gently. In a small bowl combine together tomato,basil,salt and pepper.
- Spoon tomato mixture into bottom of the peppers, divide evenly. Stuff peppers with cheese, rounding tops.
- Bake 20 minutes or until bubbly and cheese melted.
