    Cheese Stuffed Bell Peppers

    List of Ingredients


    • 6 small green peppers
    • 1/2 pound cheddar cheese 1/4" cubes
    • 1/4 pound swiss cheese
    • 1/4 pound gruyere cheese 1/4" cube
    • 1 medium tomato cubed
    • 1/2 tsp basil leaves
    • 1/4 tsp salt
    • dash pepper


    Instructions


    1. In boiling water [2" deep] in 5 qt dutch oven. In the water parboil peppers until tender-10 minutes.
    2. Drain peppers. Cut off tops remove seeds. Place, standing upright, on lightly greased baking dish.
    3. In medium bowl, combine, cheeses, toss gently. In a small bowl combine together tomato,basil,salt and pepper.
    4. Spoon tomato mixture into bottom of the peppers, divide evenly. Stuff peppers with cheese, rounding tops.
    5. Bake 20 minutes or until bubbly and cheese melted.
