    Makes 8 servings

    List of Ingredients




    8 eight oz potatoes, baking scrubbed
    Butter
    1 pound lean ground beef, cooked and drained
    1 cup hickory flavored BBQ sauce
    1 canned chipotle pepper (packed in adobo sauce) seeded and minced
    1 tsp adobo sauce(from can)
    2 cups shredded cheddar cheese ( smoked if possible)
    1/2 cup green onions

    Recipe



    Preheat oven to 425 degrees.
    Prick potatoes with fork and lighly rub with butter.
    Bake for 1 hour. Let cool slightly.
    Cut potatoes in half, lengthwise, scoop out the pulp, leaving a 1/2 inch shell. Combine beef, BBQ sauce, chipotle pepper, adobo sauce and half the cheese.
    Fill potato shells with mixture. Sprinkle with remaining cheese.
    Place potatoes on baking sheet; bake 10 min or until heated through and cheese is melted.
    Sprinkle with the green onion
