    Stuffed Zucchini


    List of Ingredients


    • 4 medium zucchini
    • 4 tbs olive oil
    • 1/2 cup chopped onion
    • 1 garlic clove, minced
    • 1/4 pound ground turkey, [1 cup]
    • 2 tomatoes, peeled,seeded and chopped
    • 1/2 cup fresh made dry bread crumbs
    • 1 tbs parsley, salt and pepper
    • 1/4 tsp basil


    Instructions


    1. Preheat oven to 350 degrees. Oil shallow baking dish large enough to hold zucchini in one layer. Trim the ends off the zucchini and cook in large pot of boiling salted water for 3 min. Drain cut in half lengthwise. Scoop out pulp, leave a sturdy shell, chop and reserve the pulp.
    2. Saute onion slowly in the oil for 5 min. then add the garlic and meat. Cook,stir constantly until meat is done. Remove from the skillet a;nd heat again,add chopped zucchini pulp and tomatoes. Saute 1 min. and add to meat mixture.
    3. Add the bread crumbs,parsley,salt,pepper and basil. Toss together lightly until mixed.
    4. Fill the shells without packing down and place on baking dish.
    5. Bake 350 degrees 30 min.


    Final Comments


    Note: I like to put a little tomato juice over the zucchini and then before serving, sprinkle parmesean cheese on top
