    Sarah: "My mother made these every year for the holidays. I have made them for a church fellowship dinner using 100 oranges. thye were a big hit! Little kids can hold them in their hands and walk around without spilling. You can prepare this up to 3 days ahead of time and it travels wwell. There's an extra bonus: the orange sections can be used for making delicious Ambrosia.


    List of Ingredients


    • 6 sweet potatoes, unpeeled
    • 1/2 stick butter, softened
    • 1/4 cup orange juice
    • 1/4 cup chopped pecans
    • 6 large oranges (heavy for their size)
    • 8 mini marshmallows


    Instructions


    1. Preheat oven to 375 °F.
    2. Cover sweet potatoes with cold water in a pot and boil unitl fork tender.
    3. Peel the potatoes, transfer to a bowl, and mash.
    4. Stir in butter, orange juice, and pecans.
    5. Mix until incorporated.
    6. Using a small knife or grapefruit spoon, cut each orange in half and scoop out the pulp.
    7. fill each orange shell with the potatoe mixture and top off with marshmallows.
    8. Bake until hot and the marshmallows are melted.
